Ingredients

  • 4 oz ground chicken

  • â…œ large zucchini shredded

  • ½ tbs onion powder

  • 1 tbs fresh cilantro

  • ½ cloves, minced garlic

  • ¼ tsp salt

  • ¼ tsp pepper

Preparation

  • Preheat oven to 400 degrees F. Line a baking sheet with parchment paper.

  • Toss chicken with shredded zucchini, onion powder, cilantro, garlic, salt, and pepper. Mixture will be quite wet.

  • Scoop moisture out by the spoonful and form meatballs onto the lined pan.

  • Bake for 20-25 minutes, or until cooked through.

  • If desired, place under the broiler for an additional 2-3 minutes or until browned on top.
