Ingredients
4 oz ground chicken
⅜ large zucchini shredded
½ tbs onion powder
1 tbs fresh cilantro
½ cloves, minced garlic
¼ tsp salt
¼ tsp pepper
Preparation
Preheat oven to 400 degrees F. Line a baking sheet with parchment paper.
Toss chicken with shredded zucchini, onion powder, cilantro, garlic, salt, and pepper. Mixture will be quite wet.
Scoop moisture out by the spoonful and form meatballs onto the lined pan.
Bake for 20-25 minutes, or until cooked through.
If desired, place under the broiler for an additional 2-3 minutes or until browned on top.
